Founding Team

Lucy Parker is a dedicated yoga instructor and a 4th grade teacher in Carteret. As an avid Brazilian Jiu-Jitsu practitioner and middle school wrestling coach, she inspires children and adults to cultivate deep practices like discipline and mindfulness to achieve goals and improve quality of life.

She is particularly interested in yogic approaches regarding ‘the fight for peace,’ and actively surfs this paradox in her role as founding Board President.

Under Ms. Parker’s visionary leadership, we drive Coquí’s mission to promote mindfulness and holistic health in Central NJ.

Teddy Brinkofski is a seasoned entrepreneur and nonprofit leader with a diverse background in software, agriculture, and community-focused initiatives. As the founder and former director of Non Profit Patient Center, he provided essential medical services to patients and guided the organization to financial sustainability, growing it into a thriving nonprofit that now generates seven figures annually.

Currently, Teddy continues his commitment to community impact through his business, which supports local recreational sports leagues and fosters collaboration and sportsmanship, exemplifying his dedication to creating sustainable enterprises and meaningful change.

Justine Muñiz is a corporate leader with over 18 years of experience at Fortune 100 companies, specializing in project management, change management, and distribution operations. A LEAN Green Belt-certified professional and graduate of the Johnson and Johnson Financial Leadership Development Program, she brings a results-driven approach to every initiative.

As a dedicated yogi for over 20 years and co-founder of Coquí, Justine is passionate about combining corporate expertise with mindfulness practices to make yoga and meditation accessible to underserved communities, and fostering environments where individuals can thrive both professionally and personally.

Justine Muñiz

Paul Muñiz, PhD is a sociologist, yogi, and social entrepreneur dedicated to advancing social good through innovation and compassion. He is a co-founder and CEO of Coquí.

Before launching Coquí, Dr. Muñiz served as Senior Vice President of Community Engagement at the Family Resource Network, spearheading initiatives that empowered families and strengthened social support systems.

Dr. Muñiz holds a BA (SUNY Geneseo ’12), MA (Cornell ’16), and PhD (Cornell ’19) in Sociology.

A former National Science Foundation grantee and a Kripalu-trained yogi, Dr. Muñiz blends data-driven strategies with inner work to drive positive social change.
